I spent the majority of my day with last minute preparations. The only thing that could potentially complicate things tomorrow is if the storm decides to stick around. Cross your fingers that it doesn't rain!
While at work I had the rest of my sweet quinoa and grapes. This "snack" turned out to be more of a meal. It kept me satiated for a full 4 hours. I was a happy camper.
I came home and decided to roast up the spaghetti squash I purchased the other day at WF.
I figured it would help add a little volume to my dinner and also serve as a lunch for tomorrow.
I even roasted up the seeds.
I've always thrown out the seeds but decided to stick 'em in the oven. They were fantastic. They smelled so buttery and delicious while they roasted and I snacked on them while the squash finished up.
I used about 1/3 of the spaghetti squash along with the rest of the leftover pasta and a dollop of babaganoush. I topped it with some crushed red pepper and nutritional yeast.
I love how the squash really does look like angel hair pasta.
Anyway, my stomach is kinda in knots right now. I'm really excited, nervous and about 10 other things for tomorrow. Have a good night!
