Comfort Food

The afternoon went by in a blur of phone calls, emails and tons of work. I snacked on some grapes and almonds before my 5pm class. During class, my mind kept racing back to my growing to-do list. I kept opening my planner and realizing how close some of my deadlines were and got super anxious.

I started craving some comfort food. In my book, comfort food comes in the form of Italian food. So, in class I started planning out dinner and came up with a quick and easy pasta.

I used a can of diced tomatoes and stuck it in the food processor with a handful of no-salt seasoning and extra garlic powder.



I cooked up some brown rice pasta and heated up some leftover roasted veggies.



The result was perfection.



The sauce was seriously good. I was stunned how well it came together. I had really low expectations considering the amount of effort I was putting into this meal. But, damn, it delivered. Who says a 10 min meal can't be as good as a 30 min one, right?

Anyway, I am stuffed. I had planned on eating a few strawberries but that's not going to happen. I'm just about ready to crawl into bed and read (for class...unfortunately, pleasure reading won't happen for at least another month).
