Thankfully, my mom left behind some food for me which made lunch prep a cinch.
Spinach salad with roasted veggies (squash, zucchini, broccoli and sweet potato), lemon rice and spiced chickpeas. This was a LOT of food but I enjoyed every bite.
Rewind to breakfast...
Oatmeal with fresh raspberries. My parents took me to Costco this weekend and I snagged two containers of organic raspberries for about $4 each.
You can count on raspberries with my oatmeal for the next few days. Hope you are having a productive Monday!
