Breakfast was oatmeal with blueberries, chia seeds and flax seed oil.
Followed by a green juice.
I headed to my 8am class (the first early morning class I've had pretty much since high school) and snacked on a pear half way through class.
Classes are 3 hour blocks, so snacks are definitely required. After class I headed to work for a few hours and got back home in time to prep and eat lunch-- sauteed onions and mushrooms with quinoa and chickpeas on a bed of spinach.
This was a LOT of food. I was really really hungry and my eyes were bigger than my stomach. I have half of this sitting in the fridge for tomorrow.
I met up with MC this afternoon to get in a little studying and a short but intense workout. We did a circuit of lunges, jump squats, pushups, frogs, plie squats, jumping jacks, 30 sec. plank and seated rotations. We did 15- 20 reps back to back, twice. Definitely worked up a good sweat.
I headed to WF to pick up some green apples for juicing and a few other random things. On the way, I developed a ragin' sweet tooth. I considered purchasing a vegan cookie at WF and eating a couple bites and chucking it. But, figured that was a waste of money and food. I settled for sampling 2 chocolate pecans from the bulk bin. I'm not entirely sure this was vegan. I was kinda embarrassed about sampling these so I high-tailed it outta there without scrutinizing the labels.
The good news is that this completely did the trick.
I met up with a friend for dinner tonight. We headed to Bodegas which is a local Chipotle-style Mexican place. I put together a salad with tomatoes, corn, olives and cilantro. On the side, I had some of their cilantro- lime rice (wasn't a fan), black beans and guac.
It was another mild day in Texas, so we couldn't resist dining al fresco. It was so relaxing! I'm SO SO SO excited for fall weather.
Post-dinner, I came home to put away groceries, clean up the kitchen and prep food for tomorrow. Now, it's time for bed and I could not be more excited to hit the hay.
