Nifty Meals

This afternoon I came home after a really long adventure through the medical center. This "adventure" included being out in the sun for over 3 hours and walking over 4 miles in terrible (but cute and business friendly) shoes. Needless to say, I was exhausted and my feet hurt.

I had yoga planned for 6:30pm so I had a little under an hour to get my act together-- which really just means hydrating and making a snack.



I threw together equal parts Vitamix-ed almond milk with some cooked quinoa. I added a little vanilla extract and a few hefty shakes of cinnamon. I then topped the whole thing with a bunch of sliced grapes.



This was pretty much a cold version of my breakfast quinoa but without the added sugar/agave and with homemade almond milk. It was delicious and totally hit the spot. I ended up only eating a third of it before yoga. The rest will become breakfast tomorrow.

Post-yoga, I came home to put together dinner. I sauteed up some mushrooms, added in roasted eggplant and some crack homemade pasta sauce.



I then tossed it with some brown rice pasta.



I had it along a few roasted sweet potato slices and my slightly twisted version of babaganoush.
