Anyway, I was out pretty late Saturday night and didn't get in bed until 3am. Needless to say, I only woke up at 10:30am Sunday morning. First order of business? Coffee.
While I sipped on my coffee, I decided to skip breakfast and head straight for lunch. So, I preheated the oven and warmed up some lasagna.
After brunch, I started work for the day. It was so beautiful outside that I couldn't resist taking some reading outdoors.
Eventually, it got too windy and I went back indoors to finish up. While completing my Sunday homework marathon, I snacked...a lot.
Roasted Chickpeas
Some sesame sticks
And, a Clif Crunch bar.
Eventually, I ate a real meal.
Spinach, mushrooms, onions, carrots and seitan. Not the best of salads, but it'll do.
I did more homework along with some food and recipe prep. After finally finishing up my assignments, I put together my dinner.
I had a bowl of granola and almond milk while I contemplated my meal.
I found some cute little purple potatoes in my fridge and decided to make a potato salad of sorts.
(The potatoes matched my nails! Made me smile.)
The only problem was that I kinda forgot about them and they overcooked.
So, they became mashed potatoes with some secret sauce.
This sauce is amazing! It's made with chickpeas, almonds, nutritional yeast and a few different spices. I'll be posting a recipe soon. You'll definitely want to make it for yourself. Just trust me on this one, OK?
