It's Raining, It's Pouring

It rained yesterday. And rained and rained and rained. To the point of flooding. In fact, there were several road closures and horror stories throughout the day. And the university sent out severe weather warning emails every. single. hour. I got it-- it's raining. Thanks.

Anyway, I got to campus a little damp. Nothing major thanks to a huge golf cart sized umbrella and rain boots. I worked for about an hour and a half then whipped out some oatmeal.



This was stellar. Pumpkin puree, almond milk, maple syrup along with the usual fixin's.

I cleaned up the office, finished up a conference call and eventually it was time for class. Yesterday was the last first day of grad school. I am ecstatic! In 5 short months, I'll have a master's. Woot!

My first class of the last day of grad school? Innovative Thinking. I was a little skeptical because um, how do you teach someone how to think?? But, the prof (who is our dean) emphasized that it can be taught. In fact, she made a TED talk about it. I'm pumped for this class. I really hope I learn something.

Anyway, by the time class ended I was pretty hungry. I ate a banana to tide me over until I could make dinner.

I came home to put together some quick fried rice. I cooked brown rice last night. So, I just heated up a veggie burger and tossed it with the rice and some crumbled seitan. I added a little Bragg's to it as well.



Delicious and filling!

Of course, my sweet tooth kicked in soon after so I made myself rice pudding. I used some leftover brown rice, almond milk, chia seeds and a little maple syrup. I let the chia seeds gel for about 40 mins and dessert was ready!





This was phenomenal. It's honestly just like chia pudding but the brown rice adds a nice texture. I'm in love.
