Blame It On the Lack of Sleep

Yesterday morning I woke up at 5:30am after a little under 5 hours of sleep. I was exhausted. The weekend was in no way rejuvenating. And I just started my week with a sleep deficit which irks me.



I got dressed and headed to boot camp. (No excuses, remember?)

Once home, I threw together a green monster.



Base (coconut water, hemp seeds, flax seeds), spinach, frozen banana and protein powder.



This bright green smoothie definitely helped my mood a little.

I was at school a little before 8:30am and started my day off with inbox cleaning. Eventually, I broke into my jar of pumpkin oats.



I think the pumpkin went bad because these were not tasty. I either messed up proportions or the pumpkin was way past its expiration date. I still ate about half of it.

MC and I met up for lunch at 12:30pm. I had leftovers from W'kana and a (unpictured) pear.



Over the course of the afternoon, I snacked on some roasted chickpeas...



...a Clif Crunch bar...



...and some iced tea with stevia.



Overall, my workday wasn't very productive. I was beyond exhausted and couldn't focus on much. I was just itching to get home and go to bed. Unproductive days are the worst. It's just such a waste of time. Grr.

Anyway, after class, I came home and decided on a quick Whole Foods run. I needed spinach, kale and a few other things. I came home with this.



I guess they bake their bread at night because this was fresh, soft, warm bread. I couldn't say no! I have issues. You best believe I enjoyed every chewy bite. Nothing like bread and (vegan) butter.

I then baked some vegan whole wheat brownies.



These came out pretty well. But, they were never meant to be eaten alone. I had other plans for this bad boy.



Homemade vegan chunky monkey ice cream. Banana soft serve + brownie! Delicious!

I'm not even gonna pretend my dinner was healthy. Bread and brownies are not nutritious but they sure are delicious!
