Ingredients include:
- the base (coconut water, hemp seeds, flax seeds)
- carrots
- green apple
- spinach
- frozen raspberries
Kind of an odd combo but super nutritious. I will say the flavor wasn't amazing but it was manageable. And this baby kept me full for a little over 3 hours.
I broke into a mason jar of pumpkin oatmeal for a late lunch.
Y'all, this has quickly become my favorite thing ever. It's tasty, healthy, portable and filling. Perfect!
I headed to class at 5pm. The auditorium was filled with 130 (one hundred and thirty!) people. (insert rant here)That's just too large for a graduate school class. It's taught by a team of professors and they are a mess right now. I went to a large state school for undergrad where 80-90% of my classes were in auditoriums filled with over 100 people. But somehow, my undergraduate institution managed. The profs designed the class to make it all work. It was so frustrating to sit in this class and see them waste time and fumble around for the proper way to handle things.
Anyway, at the end of it all I was wiped. I was hungry, irritated and had started a mental countdown to the end of this semester.
I came home and decided to get Chipotle for dinner.
Chipotle is surprisingly vegan friendly. Just avoid the meats and cheeses (duh) and their pinto beans (which are cooked with bacon) and you are good to go.
Anyway, I ate dinner, did a little work and then watched some late night talk shows. My sweet tooth kicked in and so I had a banana and peanut butter.
Yup, lots and lots of peanut butter. The jar is in the fridge and not very "spreadable" so I ended up with lots of it. Yum.
Today is my day off. I slept in, worked out and caught up on my to-do list. A mid-week day off of work is nice. It won't happen every week but it's nice to have when it happens.
