Mixed Berry and Thyme Jam

I was in Austin this past weekend for Pongal (recap coming soon). On Friday afternoon, my mom and I came across an easy jam recipe while watching Giada at Home on Food Network. There is an expiration date with recipes from the Food Network. You have to make it within the day or you will never ever make it. Knowing this to be true, we immediately purchased the berries and made a batch before the sun set.



The worst part is that the cooking and cooling time feel like eternity. I was **this** close to sampling boiling jam and risking tongue burns and my dignity. I resisted...barely.



This jam has quickly become my favorite. I've come up with some pretty creative ways to consume it-- oatmeal topper, ice cream topper, spoon topper. All good.

Mixed Berry and Thyme Jam

4 cups sliced strawberries (about 1 lb.)
2 cups blueberries (8 oz box)
1 cup maple syrup
2 tbsp orange juice (1/2 orange)
2 tbsp lemon juice (1/2 lemon)
2 tbsp dried thyme

Get everything into a pot over medium heat. Smash the fruit a little. Let 'er rip for 50-55 mins until thick. Cool for an hour or so. Store in the fridge for up to a month.

Make. This. Now.
