No Excuses!

As I rolled over this morning to hit the snooze button, I winced in pain. My body was sore! This was enough to warrant an extra hour in bed. I woke up and thought about possibly skipping my workout, but decided to take the "no excuses" approach. I dragged my overly sore muscles to the gym and knocked out a quick 25 min run/walk workout on the treadmill.

I also ran a few errands this morning and stopped by Whole Foods on my way home. I had a few coupons burning a hole in my wallet.



I picked up some juice too!



Carrots, apple, cucumber and parsely. I liked it.

I came home and started contemplating breakfast. I had lunch plans in about an hour so I decided to just sample some of my new almond butter.



This was delicious. I can't wait to put it on oatmeal!

I finally got to have my lasagna from yesterday!



Whole wheat pasta, onions, eggplant, kale, mushrooms, tomatoes and tofu ricotta.



There were a lot of veggies in here! An entire eggplant, a whole bunch of kale, 10 mushrooms and 2 tomatoes. I left the kale and the tomatoes raw and quickly tossed the other veggies in a little coconut oil. They finished cooking in the oven.

This was delicious. You really can't go wrong with lasagna. Just throw a bunch of things in between sheets of pasta and tofu ricotta and then dump some good quality pasta sauce on top. Simple and nutritious.

After lunch, I headed to the blood drive on campus. I snagged two snacks on the way out.



There was actually another bag of mini Oreos but I got to them before the camera did. I decided to save these for a rainy day. But, free food makes me happy, so I thought I would share.

Anyway, I had to go back to work after class ended at 7:30pm so, I had the emergency snack that I packed.



Bread (I couldn't resist. WF's bread is my weakness.) and tomato basil hummus. Not really nutritious but it worked.

I got home around 8:15pm and was already sleepy. I cranked out this blog post, made a few phone calls, drank tea and got ready for bed. Early bedtimes make me happy.
