Glass Half Full

I had such a great day yesterday. Lots of small successes added up and I walked home at the end of the day with a goofy grin on my face.

Let's run through the day's eats, shall we?

The day started off with a later than usual alarm and a cup of coffee. I packed up breakfast, lunch and a substantial snack and headed off to work/school. I planned on eating breakfast once I got there, but my inbox had other plans. I got caught up with work and putting out a few fires and didn't get around to eating until close to lunch time.



Vegan banana flax seed muffin from Whole Foods. I picked this up on a whim the night before and it did not disappoint. It was nutty, perfectly sweet and all around delicious. The only issue I had with it was that the flax seeds were left whole, which made for a great presentation but didn't work out nutritionally. (Flax seeds have to be ground to release their nutritional power.)

I eventually had my planned lunch at 4pm.



Veggie lasagna with extra tomato sauce and a hunk of WF bread. Yes, I still have this in my fridge. In fact, I have one more portion left. It didn't smell bad or have anything growing on it so, I figured it was good to eat.

Of course, I needed a little sweet treat after.



Dark chocolate. P.S. Whole Foods brand dark chocolate is amazing. And, it's not super crazy expensive either. Win.

I headed to class at 5pm. This Tuesday class is slowly going to chip away at my will to live. It's dreadfully boring. Luckily, I have a good team for all the group work. They are pretty funny and entertaining.

After class I started walking home in the rain until a friend saw me and insisted on giving me a ride. It was a much appreciated ride because it was coming down pretty hard.

Once home, I ate the breakfast I had packed but didn't eat. (The muffin was supposed to be my substantial snack for before class.)



Steal cut oats with soy creamer and a chopped pear. I made the steel cut oats in a slow cooker last night. They came out super creamy. I loved every bite until I had to do the dishes. So much of the stuff was stuck on the slow cooker pot. (I don't have a dishwasher, so this is a big deal.) Regardless, I think I would make it this way again.

And of course, I couldn't say no to vegan chunky monkey ice cream.



I indulged while watching the State of the Union. Can't wait to read all the responses and analyses tomorrow morning!

After that, I decided to get in bed early and read!

Back to dessert.



My heart just skipped a beat.
