Ready for School

Today I went out to Target and got my school supplies.



Technically, school started up on Monday so I'm a little late in the game. Oh well, this just meant that I got to purchase most of my supplies on clearance.

Pre-school supplies shopping, I put together a filling lunch of lentils and brown rice. While the brown rice was cooking, I sauteed up some onions, carrots and celery with a few herbs and spices.



I then poured in the cooked lentils and let it all simmer for a few minutes. I served it over the brown rice.



I followed it up with a small bowl of cantaloupe.



After hitting up Target, I cleaned my car, caught up on emails and work stuff and then fielded a few phone calls and texts. My phone was constantly ringing today. Normally, it's quiet except for a few expected daily phone calls (parents, best friend, etc.) Today, my damn phone would not shut up. I think I just got used to the relative calm of the summer. Now with school in full swing, so is everything else-- emails, phone calls and whatnot. It's ok though. That's why they have that wonderful silent option.

I was more than ready for dinner when 7pm rolled around. I sauteed up a head of broccoli, a handful of cherry tomatoes and the leftover brown rice from lunch with a handful of a dried herb mix I got from a friend.



I then pulled out the food processor and whizzed together an avocado, juice of half a lemon and a clove of garlic to make a creamy avocado sauce of sorts. I dolloped this on top of the fried rice.



Perfection. I really loved this dinner. I followed it with a pluot.



I'm really sad to see these go out of season.

I'm now settling down with some law reading and a mug of tea. An episode or two of Modern Family might sneak in there, too.
