Reading Day

I pretty much spent my day reading and/or buying books. I spent my afternoon reading The Oriental Wife and drinking a giant green juice. Then, I headed out to Borders to browse. Last time wasn't so successful. But, this time? I came home with a few finds.



I spent about 2 hours at Borders going through the mess to find these. It was worth it though. Most of those books were under $10 (three of them were under $5). I am especially excited about this one.



I flipped through it while eating dinner and it is HILARIOUS. Love it.

I came home from Borders with quite the appetite. I threw together a stir-fry of sorts.



Brown rice, asparagus, broccoli, squash, kale and chickpeas all tossed with the hatch pepper hummus dressing from earlier this week. Delicious.

I even put together the ingredients to throw this together again.



About two hours later, a major sweet tooth hit me. I decided to get a little creative in the kitchen and made sweet socca with honey (yes, I know that honey is not vegan).



In the mix:
-chickpea flour
-almond "milk"
-applesauce
-vanilla
-cinnamon
-stevia



So delicious and it smelled uh-maze-ing. It hit the spot and it wasn't too heavy. Just enough to satisfy that sweet tooth.

Anyway, I am going to watch a little TV then head to bed and continue reading.
