It was packed with toppings-- apples, chia seeds, raw unsalted pepitas, unsalted roasted sunflower seeds, flame raisins and chopped almonds. It had lots of texture and was really filling.
I think I'm a little dehydrated so I had a Zico coconut water this morning. I don't normally purchase coconut water. Mainly because I have an emotional connection with coconut water and something out of a bottle doesn't quite fit. When we go to India, my grandfather and I enjoy fresh coconut water almost everyday. It's a thing. It just feels wrong drinking it from a bottle in an air conditioned room without my grandpa.
I also can't justify paying $2.50 for it when I get it fresh for less than 25 cents on the streets of India.
I mean when you have one of these in your backyard, drinking coconut water out of a bottle just seems...wrong.
Does that make me sound like a snob? Oops.

Since I woke up so late, I decided to snack and skip ahead to dinner. I enjoyed a gala apple while catching up on some blogs and emails.
Then, came dinner. I purchased a new loaf pan at Target last week.
I had grand plans of making a clean eggplant parmesan. I finally got around to it today.
It was delicious. And protein packed. And clean. And I might dream about it tonight.
I had it with a side of quinoa pasta.
