Last Day of my Internship

Today, I wrapped up my internship. I was interning for the last 6 months at a medical college in Houston. I worked in the Office of the President completing a variety of projects in operations management. I learned a lot! And, it helped me figure out what my career aspirations are. Internships are where it’s at.

I whipped up some overnight oats with apple this morning. Alongside, I had a mason jar of carrot juice (x2).



I actually worked from home on my last day. They got rid of the intern space last month and ever since, I have had the luxury of working in my pajamas. I do go in for meetings but mostly I’m on my couch.

I spent my afternoon searching for my next book. I finished up my beach read last night and am now moving onto The Oriental Wife.



It seems promising. I'll keep you posted.

Lunch came later than usual today. But, I was super excited to break into my new stash of veg!



A mixed green salad with cucumbers, chopped tomato and a roasted hatch pepper with balsamic vinegar. I also had a little bowl of mung beans and brown rice. I made an unusually large batch of mung bean stew a few days ago. I honestly canNOT wait until I finish it up. I'm getting pretty sick of it.

I am currently in the middle of watching The Hangover. I've only seen it once before and can't remember much so I'm thoroughly enjoying it. These guys are hilarious!
