Long Night, Late Morning

Last night, I went to go visit this little rugrat.



My aunt, uncle and D are all headed to India for a few months. Imma miss that face!

It was a long night of packing. I spent a good three hours taking care of a sugar high 2 year old while her parents packed up. (I definitely got the better end of that deal...I would choose sticky hands and wet kisses over a pile of clothes any day.) I got home around 2:30am which made for a late morning today.

I still had my appetite for oats though. It was a mess...don't judge.



Same old, same old. I did add flax seed oil today though. I think it will make a regular appearance in my oatmeal from now on. Easy way to get in those omega-3's.

I was in the mood to make a creamy, hummus-like salad dressing. So, I cooked up about 3/4 cup of chickpeas, whipped out the roasted hatch peppers and got to work.



It was essentially a more tangy and thinner version of the roasted hatch pepper hummus. Less chickpeas, more lemon juice.



I used this "dressing" on my lunch/dinner.



Mixed greens, cucumbers, 1/2 a tomato, 1/2 a carrot and leftovers from yesterday's WF dinner.

All mixed up.



Delish. The dressing was tangy, spicy and all around delicious.

I headed to the park this evening for a power walk. A quick 30 mins but my legs are definitely feelin' it.

I then came home and snacked on 4 pluots (they were on the verge of dying so yes, I ate the all) and a pint of raspberries.
