A real breakfast

This morning I had a real breakfast. I'm not gonna lie...I usually don't. I'm not naturally a breakfast eater. Even in grade school, I usually skipped off to the bus stop with no more than a glass of milk in my stomach.

In college, I started getting interested in my health and read about a million articles that told me the same thing: breakfast is essential. So, I started doing a bowl of cereal here, a piece of toast there. Nothing special but it didn't last. Even when I got super healthy and became vegan and really really started caring, I couldn't hold down more than a sprouted wheat bagel and almond butter (which was eaten over the course of an hour on the commute to school.)

So, my point is, I'm not a breakfast person. I can do the green juices, but tell me to actually eat something, and I'll run in the opposite direction. Don't get me wrong, I LOVE breakfast foods. Just not at breakfast time.

Well, last night I decided that I would eat breakfast this morning. So, I put together an overnight oats "thing". I didn't really put a lot of thought into it. A half cup rolled oats, 1 tbsp chia seeds, 1/4 tsp vanilla extract with sliced strawberries and water to fill. I took it with me to work to eat after I digested my monster of a green juice and holy cow...it was fantastic!



This picture does not do it justice. It's kinda like a strawberry cheesecake. Kinda. The oats are at the bottom and get really thick and chewy. The strawberries get really soft and juicy. And with that hint of vanilla? Outta this world! You have to try it.

I'm thinking this might make me a breakfast convert.

Oh, also, totally random. But, look at this rainbow chard! I got it at WF yesterday and was blown away by the color! Amazing.



Lunch was leftovers from yesterday's salad with beets on the side this time.



I came home ready to make some dinner. I really wanted to use up some sad looking tomatoes today. So, I picked up some fresh basil on yesterday's WF run and figured out the rest today.







I peeled my tomatoes and stuffed them in the food processor with a few cloves of garlic and almost half a cup of fresh basil. I added this mixture to sauteed onions and let them meet and greet for about 30 mins. I served it over quinoa pasta. The flavor was fantastic but the chunks of onion kinda ruined it for me. Next time, the whole party will move into the blender before hitting the pasta.

Anyway, I am calling it an early night. I think tonight will be the night I get back on a decent sleep schedule.
