The positives: My energy was really stable throughout the day. The juice helped with the midday slump (which, some days I never recover from).
The negatives: I felt like I was constantly either prepping for or cleaning up after a juicing session. It was a never ending cycle.
This morning started with a green juice.
Romaine lettuce, red chard, beet tops, watercress, endive, green bell pepper, red cabbage and green apple. Pretty typical ingredients but a much smaller quantity. The entire board gave me a small 8 oz mason jar of juice.
Later this afternoon, I put together a carrot juice with carrots, green apple and celery.
I rounded out the day with a second green juice that I had post-dinner.
I think I can easily continue this for the rest of the summer. But, I have a feeling that once school starts up again, I will have to combine the two green juices into a 16 oz fiesta in the morning followed by an early evening carrot juice.
The rest of today’s eats:
Overnight oats. Same combo as yesterday but with a tbsp of wheat germ stirred in for extra nutrition.
Lunch wasn’t noteworthy- salad, apple cider vinaigrette, grapes, etc.
Dinner was another salad with a side of beans and quinoa for a little protein.
That’s not pesto. It’s actually mint chutney! I know, wild, right? It stole the show. Salad tossed with mint chutney was definitely a shot in the dark but it turned out so, so well. It was definitely not a boring salad.
I spent a good portion of my day catching up on blogs and cleaning the juicer. I went out to meet some friends for happy hour and also had to make my third (!) Whole Foods run of the week. Planning fail.
