Roasted Veggie Salad

Last night I couldn't go to sleep! I was laying in bed staring at the ceiling till past 4am. So when the alarm went off, it was immediately ignored. I woke up at 1pm to a phone call. This obviously threw me off my game. I am hoping that I will fall asleep tonight at a reasonable hour. I must get into work tomorrow by 8am. Must.

Anyway, the day started out with the green juice. My red chard looked a little sleepy so I used up as much as I could.



This was soon followed up with lunch. I have only become a salad person recently. I used to think they were dull and boring. I used to force myself to eat them. But now, I enjoy them. The key for me is to treat them like any other dish. You have to play with flavors and experiment. Anyway, this salad was an "everything but the kitchen sink" kind of situation.

It had....

Roasted onions with garlic and thyme



Sauteed mushrooms with thyme



The last of the marinated chickpeas. Roasted and toasted.

Grilled corn. (SO delicious. Summer corn= candy)



And two grilled socca flatbreads.

And post-toss. The beets made everything pink. My fingers are still recovering.



After lunch, I bummed around for a few hours and then went to visit my cousin, D. After playing with her for a few hours, I decided on a WF trip. I didn't *really* need it. But, I didn't mind getting more red chard and grabbing a few limes and jalapenos to make guacamole. I came back with a bagful of finds, three of which made an appearance at dinner.

I wasn't super hungry so I heated up an ear of corn and served it with find #1: salt-free "Mexican Fiesta" seasoning.



It was quite nice. It's a blend of tomato, garlic, onion, paprika, cumin and a few other things. I want to use this with some black beans later this week.

I served up the corn with a slice of lime and a snack bowl with two new finds: unsalted pistachios and wild tibetian goji berries. Dried mango also made an appearance. :)



I am settling in for an episode of Sex and the City and then its off to bed. I'm going to take a really boring book with me in the hopes of falling asleep early. Wish me luck.

  1. Oooh how'd you roast that corn? That's another thing I LOVE in India: mmm, suttu solam.

    I roasted it on a grill pan I got at Ikea. I covered it with some foil towards the end to get it all the way cooked.

    And omg...I love corn with that masala stuff on it! SO GOOOD! My dad does it a lot. It's addicting.
