I'm back!

I'm baaaccckkk! Did ya miss me?

I had two wonderful summer trips to Cali and to India. More on that later.

For now, let's talk about food. I'm gonna take a different approach to blogging for the next couple weeks. I'm gonna try to have more day-to-day posts with pics of food, stories of my day and just random musings. Recipes are going to be put on the back burner for a little while. Trust me, they will show up, but it won't be the focus of the blog anymore. Let me know what you think!

Today for dinner, I felt inspired. I decided to whip up something that I named "Socca Stackcakes". It's basically small socca layered with sauteed and fresh veggies. Sounds simple but OMG was it delicious.



I spiced up the socca batter (which is traditionally just chickpea flour and water) with a handful of spices. I used dry basil, oregano, and a good palmful of thyme. I then caramelized onions and sauteed up some cremini mushrooms and spinach with a few pinches of thyme. I layered socca, the onion/mushroom/spinach mixture and fresh cut tomatoes. It was relatively easy and oh so good.



After I licked my plate clean and wiped down my kitchen, all I could think about was strawberries. Summer strawberries are so addicting. I just can't get enough. I hopped into my car and drove to Whole Foods (which I justified because I also needed some garlic). Anyway, dessert was soon to follow along with some summer reading.

Meeting some friends for a drink in a little while and then I'm off to bed. Unfortunately, I have to go into work tomorrow. I'm hoping it'll be a short day!
