This bowl had the typical characters (x2) with a special guest. I managed to track down some watercress at Whole Foods a few days ago and decided to add it to the mix this morning. Good in theory, terrible in reality. I've never used watercress before but figured it had a neutral flavor and wasn't particularly detoxifying. Boy, oh boy, was I wrong. Watercress has quite a bite. It made the entire batch really spicy and hard to chug. We drank it up anyway.
And then, something weird happened. My dad and I got really light headed. We were both feeling really dizzy to the point that I had to put my head down on the kitchen table and sip water for about 25 mins. My dad and I kept saying that we felt kinda tipsy/drunk. We later found out that watercress is incredibly detoxifying and releases toxins and cleanses your liver very quickly. Hence the tipsy, light headed feeling. That green "beer" sure did a number on us.
Anyway, moving onto lunch. I threw together a salad with romaine, spinach, tomatoes, red onion, sunflower kernels, grilled portabello, half an avocado all topped with a generous squeeze of lemon. I had this with a side of leftover black eyed peas.
I then followed up with a sliced plum that I shared with my dad.
Tonight, we had a few family friends over for dinner. They are also super healthy eaters so my mom left the cooking up to me.
I put together the same salad I had for lunch and some quinoa stuffed peppers. I made these over spring break using a Whole Foods recipe and haven't stopped thinking about them. Tonight seemed like the perfect opportunity to make these again. Win.
Our guests also brought over some rajma, an indian kidney bean dish, which was served with brown rice.
Dessert was a massive bowl of cherries and an equally massive bowl of strawberries. Perfect summery ending to our meal.
Everything was stellar. It was light but filling and incredibly flavorful. Those quinoa stuffed peppers never fail. They were uh-maze-ing. Tonight was filled with more than great food though...we also had some great conversations. We talked about everything from health and juicing to addictive behaviors and marriage. Quite a night.
