Peanut Butter Cookies

I rarely make peanut butter cookies. But, Yam and I were feeling it one night. So, we got to work. We turned on the Disney Pandora station, belted out some classics and put together some of the best vegan peanut butter cookies.

And since these only took like 20 mins and we weren't quite done with our rendition of "I'll Make a Man Out of You" we also put together another batch of herb biscuits and vegan chocolate chip cookie bars.

Anyway, back to these cookies.



These cookies are chewy and not too sweet. They are perfectly peanut buttery and just begging for a dunk in some (almond) milk. You won't regret making these. They come together quickly, bake in about 10 mins and travel well.



Vegan Peanut Butter Cookies
Makes 2 dozen small cookies

2 cups flour
1 tsp baking soda
3/4 tsp salt
1 cup peanut butter (We used chunky)
1/2 cup brown sugar, packed
1/4 cup white sugar
1.5 tsp vanilla
1/4 cup + 3 tbsp almond milk
3 tbsp olive oil

Place peanut butter in a microwave safe bowl. Microwave for 20 seconds until soft. Stir in the sugars, vanilla, almond milk and olive oil until smooth. Sift together the dry ingredients in a separate bowl. Add the dry ingredients into the wet and stir to combine. Chill the dough for 30 mins. Preheat the oven to 350 degrees. Shape the dough into small balls and place on a baking sheet. Use a fork to press down the dough and create a crossed design. Bake for 10 mins and cool for 5.



Way better than going after the peanut butter jar with a spoon.
