Apple Bran Muffins

There is a fine line between a muffin and a cupcake. Some muffins definitely toe that line. Sometimes, I love it and feel like I'm getting away with something. Dessert for breakfast? Sign me up!



But, too much sugar in the morning kinda ruins the day. (The kid inside me is protesting right now. Gimme Cocoa Pebbles or gimme death!) Really though, you eat a sugar heavy breakfast and you will find yourself craving more sugar and refined carbs for the rest of the day.

This muffin is for champions. Complex carbs, real fruit and just enough sweetener to make the kid in you smile.



Apple Bran Muffins
Makes 12 muffins

2 1/2 cups oat bran
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp baking powder
1/2 tsp baking soda
3 ripe bananas, mashed
1 tsp vanilla
4 tbs maple syrup
1/3 cup orange juice
3/4 cup water
1 apple, cored and chopped
1/2 cup walnuts, chopped

Preheat an oven to 375 degrees.

In a large mixing bowl, mix together the dry ingredients (oat bran, baking powder, baking soda and spices). In a smaller bowl, mix together the mashed banana, maple syrup, vanilla, orange juice and water. Add the wet and dry ingredients together and combine. Mix in the chopped apples and walnuts.

Prepare a muffin tin with liner or oil. Fill each cup to the top and bake for 40-45 mins until golden on top.
