It's funny how a cookie can soothe your soul. (They used to think it was chicken soup, but that's because they haven't tried the cookie method.) These cookies are more than a dessert. They are comfort and bliss. They even have medicinal properties. (Ok, not really, but chocolate is kinda magical.)
These cookies are filled with some of the good stuff (whole wheat, flax seeds) and some of the really good stuff (sugar and chocolate). They are chewy, chocolaty and just all around delicious.
Double Chocolate Cookies
Makes 2 dozen
1 tablespoon + 2 tsp ground flax seeds
1/2 cup almond milk
1/2 cup melted coconut oil
2 cups sugar
2 tsp vanilla extract
2 cups whole wheat flour
3/4 cup cocoa powder
1 tsp baking soda
pinch of salt
1 cup chocolate chips (I used 1/2 dark chocolate and 1/2 vegan carob)
Preheat oven to 350.
In a small bowl mix together the flax seeds and almond milk. Set aside for 10-15 mins. While this gels, sift together the flour, cocoa powder, baking soda and salt in a bowl. Next, cream together oil, sugar and vanilla. Add in the flax seed and almond milk mixture and stir. Add the dry ingredients in small batches and combine until smooth. Stir in the chocolate chips.
Scoop out dough balls onto a cookie sheet. Bake for 10 minutes. They might not seem done, but trust me they are done.
The dough freezes beautifully. Just portion them out and freeze them on a tray lined with wax paper. After two hours, you can transfer them to a ziplock bag.
I suggest you throw in 27 Dresses and grab a cozy blanket.
