The day started off with a quinoa bowl. Quinoa, bananas, strawberries, and coconut milk.
I normally use almond milk, but bought coconut milk for a recipe and am just using the rest of it up. I'm not sure I like coconut milk plain like this. It's really thick/creamy and it's also really white, which is oddly a turn-off for me. I know, I'm weird.
And then, things got really, really, really busy. Things were productive and good, but I was way too busy to eat. I was also constantly around people or in meetings, so eating wasn't gonna happen.
By the time class rolled around at 5pm, my stomach was super unhappy with me. In class, people passed around cookies, chocolate and candy. The only vegan treat were these Smarties.
I ate about 5 pieces before it made me feel sick. And, I knew I had to step out of class to eat a proper meal. So, I ran upstairs to my office and dug around my lunchbag for the easiest thing to eat.
Idlies with onion chutney (from over the weekend). I scarfed this down in my office before returning to class. I didn't even chew in the beginning which made me sick and I had to slow down and chew and swallow and you know, be normal.
Anyway, I returned to class with an Odwalla smoothie.
Mmm.
Post-class, I came home and put together a really small dinner of quinoa and cauliflower & coconut milk curry.
I wasn't super hungry since I ate "lunch" at about 6pm. This was perfect.
I also came home to a fun package from NuNaturals.
NuNaturals sent over a handful of vegan stevia products and a package of recipes for me test out. I am so excited to try it out and review the product. I am particularly excited about these guys.
So, friggin cool!
Since it was V-day and I am a blogger, I felt obligated to do something special.
So, I got a manicure...
And, baked! (With the new NuNaturals products, of course!)
