But, I couldn't keep my hands off of them. I finished off the small batch before they even cooled. They were SO delicious. I dried the chickpeas between sheets of paper towels, coated them in a little olive oil and shook on some salt and curry powder. After about 30 mins in the oven, they were crispy little nuggets of flavor. Love.
After class, I came home and put together dinner in under 20 mins thanks to a little prep work earlier in the week.
Creamy curried cauliflower soup. I modified a recipe I got off of the Whole Foods Recipes app and it was fabulous. It was light and creamy. And the roasted pumpkin seeds on top added a nice crunch.
I was on the ravenous side, and this wasn't filling enough. So, I made a green monster.
And this was quite the little monster. It made A LOT.
Spinach, kale, frozen grapes, hemp protein powder and coconut water.
After an impromptu Costco trip, I blew a few hours watching TV and reading blogs. Eventually, I settled in for a movie and midway through, I was ready for a midnight snack.
Enter, my new favorite comfort food-- avocado on toast.
It's simple. Toast up some bread, smash some avocado on it, sprinkle with salt and pepper and enjoy. It's scrumdiddlyumptious.
