Yesterday was a fun filled day-- group meeting, work and class. Doesn't sound fun but...
- my group meeting for class was with a bunch of really fun and funny people.
- I cruised through a monstrous to-do list for work and got in some "extras"
- and, I LOVE my Innovation class. It's so interesting! It's so nice to get your creative juices flowing. It's a good time.
Breakfast was eaten pretty late because my group meeting went for 3 (THREE!!) hours.
Crumbled dark chocolate quinoa bars with a sliced banana and almond milk. Not the best picture, but you get the idea.
Because breakfast got pushed back pretty late, so did lunch.
Leftover guacamole and Mary's Gone Crackers
And a ginormous salad.
This was definitely one of the better salads I have created. It was filled with spinach, kale, sliced radish, carrots, cauliflower and pomegranate arils. I think it was the pomegranate arils that took it to the next level. It was the first time I've used fruit in a salad and I loved it.
After class, I got home close to 8pm and was exhausted. I reheated the second half of the butternut squash ravioli & peas from the weekend for dinner.
I chowed down and miraculously got a second wind. I didn't do a good job prepping for the week on Sunday night, so I finished the job. I made some curry, cut up some veggies, steamed some green beans, and made a batch of quinoa. After cleaning up, I made myself a little "dessert."
Hmm, look familiar? It's because I had the same combination for breakfast. But, it was so good that I kept thinking about it so I went for it. I went to bed happy.
