Backtrack & Observations

This week is a little nuts. I've been completely crazed with work, midterms and meetings. But, I have been getting in my greens!



In the form of green smoothies (a special spotlight post coming your way tomorrow)...



...and, some huge jass salads.





I've had a really fun time building my salads. They have been more fun to eat than I expected. And, I've realized it's really all a mental game. Generally, we think of salads as drab, too healthy or rabbit food. But, the salad world is so much more! It's colorful, fun and filling.

I do think that the dressing makes or breaks a salad. I've been experimenting with some oil-free, vegan dressing recipes. Once I master a few, I will be sure to share. The toppings also play a big role. I try to add at least 4 different veggies on top to keep it interesting. It's been helping so far.

One other observation? Salads take a LONG time to eat. I'm so used to scarfing down food. I've realized that it takes about 30-40 mins (!!) to eat the entire salad. The first two days of salad eating, I only had time for half the salad during lunch and ended up eating the other half for dinner. This clearly means I have to allot more time for lunch breaks. (You know that I'm generally not good at taking lunch breaks. I've really got to work on this now!)

Anyway, so far, so good. I'll post an entire day of eating soon!

    1. Yeah! It took me a day to figure out why I was having a hard time. There is A LOT of chewing involved! :)

  2. Do tell us what you put in each of those salads pictured! Did you cook/steam some of the veggies beforehand, or were they all raw?

      The salads all have the same greens base-- spinach, chopped kale, swiss chard and collard greens.

      The first salad had carrots, celery, jicama, cauliflower, broccoli and cooked french lentils. All the veggies were raw in this salad.

      The second one had carrots, jicama, radishes, pomegranate seeds, cauliflower, green beans and butternut squash. I steamed the butternut squash and the green beans for about 8 mins the night before. Everything else was raw.

      Yup, these salads are little monsters!
