Sunday No-Fun-Day

Sundays are never fun for me. (I've mentioned this before.) Sundays are catch-up and prep days. I catch up on readings for school that I've neglected over the past week and then get started on assignments for the coming week. And, then after all that, I still have to run errands and prep food for the week. It's a HUGE BUMMER! But, I smile on.

Anyway, I grumbled as I got out of bed this morning. Not because of the long day ahead but because it was insanely cold. We had one of the coldest nights of the winter here...a whopping 37 degrees!



I had some cereal with almond milk and a mug of tea while writing out my to-do list for the day.

I got to work immediately and took a break to make lunch. I was starving by the time I thought about lunch so, it had to come together quickly.



Butternut squash ravioli & peas with a sage and brown butter sauce.



It was mouthwatering. I really wish that this ravioli was more widely available. Although, if it were, I would end up eating it everyday. So, it's probably a good thing that I can rarely find it.

I finished lunch off with a crumbled dark chocolate quinoa bar topped with a little agave.



After working a couple more hours, I was ready for a snack.



Mary's Gone Crackers and an mini Odwalla. Both were Costco purchases from earlier this week.

I finished up my to-do list shortly after and did a round of errands. When I returned, I put together my dinner.



Sloppy G! Remember these? Well, this guac wasn't really guac. It was more of avocado mixed with odds and ends of random veggies with the juice of one lemon.

I prepped some food for the week and cleaned the kitchen before sitting down to an episode of Downton Abbey and passing out.
