The last two days, I have really been in the mood for sandwiches. They are easy to make (less than 15 mins), easy to clean up (minimal dishes in the sink) and easy to eat (it's like a party in your mouth!).
My top two sandwiches:

Veggie burger with all the fix-ins.

Seitan-wich. Miso-glazed seitan with onions and honey mustard.
Both are delicious, nutritious and quick. <3
