I thought I could handle the no-fruit thing. Wrong! I popped a grape with every bite.
I also had a green juice this morning!
I then went to pick up MC to make a Costco run. I came home with spinach, raspberries, butternut squash and a handful of other stuff. I <3 Costco. I could spend hours there. Sometimes I go there just to roam the aisles. Yeah, I'm weird.
Anyway, after our late morning Costco trip, I reheated some leftovers and headed to campus for work and a 5pm class.
I munched on a few almonds while I listened to a lawyer talk about defined benefit plans and 401(k)s. He was actually pretty interesting and shared quite a few war stories. 'Twas as fun as law lectures can be.
I came home to some magic! Crock pot magic that is. Before I headed to class, I threw a handful of things into the slow cooker to make channa masala.
I came home, made some brown rice and dinner was served.
It was really delicious and super simple. The best part was definitely coming home to an apartment that smelled of masala!
Post- dinner, I had a carrot juice. Yay for juicing! Aren't you proud?
I tried really hard to keep my hands off the sugar post-dinner. But after about an hour, I couldn't help but satisfy my sweet tooth in the form of pancakes.
These pancakes were AWFUL! I ran out of sprouted wheat flour so I decided to use almond flour. They had the funkiest texture. But, the chocolate/strawberry mixture hit the spot.
Alright, time for an episode of Friends and a mug of tea before bed. Session 4 is tomorrow and I am super duper excited. We are covering some really fascinating topics and have stellar guest lecturers from around the country coming in. CanNOT wait.
