They were delicious nonetheless. I enjoyed them with a side of green juice.
I did some more work but spent most of the afternoon outside with a mug of tea and a book.
I cannot put this book down. It is so unbelievably good!
I put together linner (lunch/dinner) at about 4pm. I roasted up onions, some squash, zucchini and butternut squash. I also threw in a red potato and a sweet potato for good measure.
While the veggies roasted, I made a quick tomato sauce with canned no-salt-added tomatoes, a couple cloves of garlic and a handful of dried herbs.
It came together with some brown rice pasta and nutritional yeast. Delicious.
Dessert turned out to be a small bowl of grapes.
When I snack on grapes, I tend to peel them with my teeth before eating them.
Am I totally weird? Can you please still be my friend?
Post-linner, I headed to Whole Foods because I was bored. Hah, just kidding. Although, I wouldn't put it past me. It was for my mid-week grocery run (which I have decided to make peace with. It works much better than trying to stuff a week's worth of veggies in my fridge.) I came home and chugged a carrot apple juice and watched an episode of Friends.
Now? It's time to get in bed. Not because I am tired or have an early morning, it's because I have an amazing book waiting for me on my bedside table.
