The Monday Blues

I've been under the weather most of the day. Not sure what's going on, but hoping a solid night of sleep will do the trick.

I started out the day with oatmeal with apples and a spoonful of yogurt (mixed with cinnamon & vanilla).



This kept me full and focused through emails and errands. By early afternoon, I needed a nap and some tea. I had both and then put together a simple lunch/afternoon snack of a few spoonfuls of yogurt, a dollop of pumpkin puree and some granola.



I made both the pumpkin puree and the granola yesterday. The granola is fantastic. I'll share pictures and a recipe soon!

I spent most of the late afternoon being a bum. When dinner time rolled around, I really didn't have the energy to do anything very creative. I had an avocado and half a tomato and cucumber in my fridge so naturally, I put together a sloppy G.



Sidebar: Cucumber and avocado are the perfect couple. Who knew?
