Slow Cooking Sunday

Yesterday, while shamelessly watching part one of Kim Kardashian's wedding special, I put together a really really big pot of soup.



And, if I had known how tasty it was going to be, I would have taken more pictures. The one above will have to do.

The thing about making this soup is that it takes no time at all and takes 2 hours at the same time. (Don't worry, that didn't make sense to me either.) The prep time for this soup is all of 15 mins. Just a rough chop on onions, leeks, potatoes, tomatoes and celery with half a bunch of parsley and a few cloves of garlic. You dump this into a huge pot with filtered water and let it simmer for 2 hours. 2 hours! Thank goodness for Kim Kardashian and her utter lack of self awareness.

While I slowed it down, I decided to whip out the slow cooker and make some beans.



I threw in some soaked black eyed peas, a pinch of cumin, coriander, garlic powder and red pepper flakes.

My aunt gave me this slow cooker and it is now my new best friend. It certainly takes a little planning but the beans come out like butter. They are ridiculously creamy and delicious.

Both of these made a very worthy appearance at today's lunch.



The soup was amazing. It was creamy and filling. (Thank goodness because I have a monstrous batch of it to go through this week.)



The beans and a slice of sprouted wheat bread for dipping.



This was a pretty filling lunch. I was a happy camper all the way until 6pm!

My week looks really busy but I have been relatively calm. This week I have a test and session #2 for work. I also have a full day of meetings tomorrow. Class has been cancelled (due to the test) but the 3-hour time slot has been filled with work meetings. Yuck.

  1. So did you blend all of the veggies and stuff after they had simmered for 2 hours?
