I know that the blog is called "Vehemently Vegan" but I honestly chose that name because of the alliteration. I do believe that a vegan diet (done correctly) is one of the healthiest ways to eat. But, I don't believe in labels or judgment.
In recent months, I have made an effort to eat nutrient dense foods. This has led me to add small amounts of homemade, organic yogurt to my diet. Yogurt offers me a complete protein in a pinch. I spend a lot of time meal planning and combining foods so I can get complete proteins. But, I always am unable to complete my protein at breakfast time. This lead me to a lot of research which eventually led me to yogurt.
I hate yogurt. I really, really resisted the change. But, it was necessary.
I make my yogurt at home, using the best (least pasteurized and organic) milk I can find. I try to be as responsible as possible. I might stick with this change long term or it might only last a few months. We'll see.
Anyway, onto the eats.
I woke my tired ass up at 6:30am this morning after about 3 hours of sleep. Don't ask.
Breakfast this morning was a small bowl of oats with a dollop of what looks like whipped cream but in reality is just really really thick yogurt.
I was painfully tired and could barely keep my head up while studying this morning. It was time for a nap. My 20 min nap turned into a two hour ordeal. But, I didn't mind. It boosted my productivity for the rest of the day and uh, you know, kept me alive.
Lunch was a bowl of crock-pot black bean soup I made last night. I topped it with "croutons" which was just a toasted slice of sprouted wheat bread that I cut up.
I came back from class with not much of an appetite for anything. But, then I eyed a piece of maple apple spice cake and couldn't say no.
I topped it with homemade greek yogurt and some homemade granola and called it dinner. So incredible.
I am spending the rest of the night catching up on some house chores and then getting ready for exam #2 of the week.
