This year is a different story. So, I put in the absolute bare minimum and purchased a costume for all of $5.
I'm hoping it comes of cute/innocent instead of lame.
After a few other things, including a trip to the temple and the doctor's office, I came home for a Mexican fiesta. In lunch form, of course.
Black bean soup, half a guac sandwich (which I have affectionately termed "sloppy G") and some salad tossed with a lime and cilantro dressing.
This dressing is crack. It's simply the juice of two limes, a tablespoon each of flax seed oil and olive oil, a large clove of garlic, a handful of cilantro and two tsps of maple syrup. So. Good.
Lunch was followed by one final errand before
Anyway, when I finally did hit the books, I downed a kombucha.
For dinner, I just wanted more guacamole.
Sloppy G, take two.
I cleaned up and went back into my world of misery known as healthcare law. About 30 mins later, I had a really weird craving. I wanted bread pudding. Um, yeah. Don't know where that came from. Especially because I have only had bread pudding twice-- at Madrigal Dinner and on a cruise.
But, I looked up a few recipes and realized I had the ingredients, so you know, why not?
It was really simple. Just almond milk (I thinned out my homemade "almond cream"), sugar, cinnamon, nutmeg, raisins, almonds and day old bread (I used a few slices of sprouted wheat bread).
Looks can be deceiving.
It wasn't that it was bad...it just wasn't good. Some recipes are just not meant to be "healthified."
Oh well, you win some, you lose some.
**Also, to all my Indian readers-- HAPPY DIWALI!**
