I have been loving my time at home. It's been a well deserved "vacation." I have been able to sleep in, coax my mom into doing all my chores (laundry, juicing, etc.) and have spent ample time crossing things off of my ever-growing Netflix Instant Queue.
I am currently in my room listening to the rain. While my parents are napping and my brother is playing computer games. It's the perfect Saturday afternoon.
So, let me catch you up on a few recent eats.
Oatmeal with grapes and pears. We have a grape problem in this household. I keep working through pounds and pounds of grapes and my parents keep replenishing the stash with Costco-sized tubs of organic table grapes. We are clearly having communication problems. No more grapes!
Golden Quinoa Salad with Citrus Vinaigrette. We had lots of orange things in our house-- butternut squash, golden beets, carrots and a lot of oranges. So, I roasted up all the veggies, combined them with quinoa and topped it with a simple citrus vinaigrette (fresh orange juice, olive oil and dried mint leaves). Dinner is served.
Pizza. I was craving my all-time favorite dish yesterday. So, I made some. Let me warn you, this doesn't taste like real pizza at all. When you are vegan and eating unprocessed foods, real or nearly real pizza is never on the menu. But, if you close your eyes and pretend, this would probably make the cut.
I made a yeast free crust using organic sprouted wheat flour and water. The creamy sauce was made of sundried tomatoes, soaked cashews, lemon juice and parsley all creamed together in the Vitamix. The toppings included nearly caramelized onions (we got a little lazy), portabello mushrooms, tomato slices and roasted garlic. It was pretty damn good. The most surprising thing was the crust which was soft and chewy and delicious. Next time around, I am definitely adding more veggies. I missed them.
Alright, it just started straight up storming outside. Better close the windows before my room gets drenched. Enjoy your Saturday!
