I came across this recipe this weekend and could NOT keep my mind off of it.
It's healthy but doesn't taste it.
I made my own applesauce using a half dozen organic gala apples. I heated up a saucepan with about an inch of filtered water and dumped in the apples.
About 20 mins on low heat and a run through my immersion blender resulted in some sweet stuff.
I also went out and purchased raw cane sugar for this recipe.
I've never used this before. It looks just like Sugar in the Raw. Maybe it's the same stuff?
Maple Apple Spice Cake
Adapted from The Gerson Handbook
Cake:
1/4 cup maple syrup (the real kind!)
1 cup applesauce
3/4 cup raw cane sugar
1/4 tsp ground cinnamon
1/8 tsp ground allspice
1/8 tsp ground nutmeg
1/8 tsp ground mace
1/4 tsp ground coriander
1 tbsp sodium free baking powder (Featherweight is a good brand)
1 1/2 cup oat flour
3/4 cup sprouted wheat flour
Crumb topping:
2/3 cup rolled oats
1/3 cup maple syrup
pinch of allspice, mace, cinnamon
1. Combine wet ingredients. Combine dry ingredients. Combine together.
2. Grease a loaf pan with a small amount of coconut oil and pour in the batter. The batter is pretty thick, don't fret.
3. Combine the ingredients for the crumb topping and sprinkle on top.
4. Bake at 325 for 40 mins.
It smells like autumn at its finest.
