Spring Break Prelude

On Friday, I was up bright and early for work. I made myself a green smoothie for a quick and nutritious breakfast.



While sipping away, I showered and prepared for the day. I got to the conference center a little before 7am and helped myself to some breakfast after setting up.

We got through the morning without any major hiccups. It was business planning and financial management day. Fun but a little boring at times.



Lunch was a plateful of house salad with lemon squeezed on top. They had dressing available but one had cheese in it and the other had copious amounts of oil. No thanks.

I had a sugar craving in the early afternoon. The sight of brownies and lemon bars didn't help. Luckily, I had a packet of NuNaturals stevia in my wallet.



I poured myself a glass of iced tea and sweetened it with the stevia. It did the trick. TGFS (Thank goodness for stevia)!

I got home at about 5pm and had a small green smoothie.



I then went to visit my cousin, D, and play for a while. I got back at about 7pm, just in time to put together a quick dinner. I knew I wanted broccoli, but I wasn't super set on what to do with it. I decided to lightly steam the broccoli and top it with a creamy, cheesy sauce.



I am truly and deeply sorry I didn't measure everything. I really wish I could've shared a recipe. But, that's just my life. The times that I measure everything, the product is not blog-worthy. I have SO many photographed and measured recipes that never see the blog! And then the days that I throw things together without really thinking/caring, I'll get something I want to share and can't. Oh well.



This was such a superb sauce. It was flavorful and cheesy and creamy and just flat out divine. Ugh, ok, let me try to make a few guesstimates. I really want you to try this sauce!

handful of cashews, soaked in hot water
3-4 sundried tomatoes, soaked in hot water
1 T white miso
3-4 T nutritional yeast
squirt of Bragg's
2-3 shakes of:
- paprika
- onion powder
- garlic powder
- black pepper

Throw it all in the Vitamix and mix on high until smooth. YUMM.

After dinner, MC came over with Moneyball. It was CRAZY boring. I was not a fan. I had my phone out after 20 mins and fell asleep in the middle. We decided that it was a good movie for baseball fans, not because it was about baseball but because it had the same pace-- slow. Like mind-numbingly slow.

Anyway, post-trying-not-to-die-of-boredom I stayed up watching a few episodes of The Office on Netflix. I made myself a snack of avo on toast.



Sprouted wheat bread, half an avocado, lime juice, black pepper, cayenne pepper and paprika. Delicious.
