I started out by water-sauteing some carrots and celery.
I then added in a handful of sliced mushrooms, cauliflower, about 2/3 cup of cooked lentils and a mound of greens. To make the broth richer, I added in the last of the cashew cheese sauce from last Friday. I also threw a tomato, some spices, nutritional yeast and about 2 T of nuts into the Vitamix for some extra broth action.
I let it all cook down until the greens were just a little wilted and served myself a big bowl of homemade soup!
Thanks to some food prep, the whole thing came together in about 10 mins. Most of those 10 mins was cooking time.
I had leftovers for dinner and for dessert, I enjoyed some applesauce and almond milk.
Absolutely delicious. I actually had another helping and two more throughout the day. It was SO SO good.
Yesterday morning/afternoon, I spent the day running around town. I had an acupuncture appointment, followed by a haircut and a mani-pedi. I came home, got some work done and showered in time to go to a high school information session for my brother. My brother will be starting at the same high school that I was at 10 years ago! The school looks completely different now. They spent $35 million renovating over the past four years and it looks fantastic. I had a hard time getting around and connecting to the place but that's OK. They also had a lot of teacher turnover. The only teacher still around is my Journalism teacher. I caught up with her (she actually remembered me!) and we headed out. It's crazy to think my brother will be starting there in the fall. Just yesterday the little man was visiting me there after school and my friends fawned over the little baby boy and played catch with him in the hallways. Time flies!
