So Close Yet So Far

Spring break seems within my reach. Kinda. I have been thinking (more like dreaming) about spring break for about 3 weeks now. And this week has really worn me out. 8-to-8 days are no fun.

Today, started out wonderfully with an email from my professor declaring that class was cancelled. I was thrilled! I decided to take an easy morning and watch an episode of The Office while eating my breakfast.



I got to school and started on my long to-do list. I ate a light lunch of cucumber slices and homemade, oil-free hummus.



The hummus was a little dry but still delicious.

I was hoping to head home at about 5pm but that didn't happen. I ended up staying until about 8:30pm, editing and revising some documents for tomorrow.

I came home and put together a massive bowl of salad. I had it ready to go in a Ziploc.



So, all I had to do was add dressing and toss.



Greens (spinach, kale, Swiss chard, collard), carrots, celery, cauliflower, jicama, zucchini, cucumber and cooked lentils.



I tossed it with some dressing inspired by the sunflower seed dressing from Choosing Raw. I changed up Gena's recipe a little by omitting the garlic and the salt and adding a soaked date instead of the agave. I also use different herbs. Maybe I should just do a post about it. It's going on my to-do list.

After dinner, I caught up with my friend and my parents over the phone. I was ready to settle down for some TV but decided to watch yesterday's Modern Family instead. Best decision ever. It was hilarious!

While watching, I put together and savored some chia pudding.



I blended together 3 dates along with some almond milk and a little vanilla stevia. I poured the mixture over the chia seeds and let them do their thang. I topped it with a little Justin's Maple Almond Butter. It made me weak in the knees. Swoon...
