Creamy Strawberry Balsamic Dressing

Last week, I caught up on some blogs and came across a citrus dressing. I immediately fell in love with the idea of fruit in a dressing! Then, during a particularly boring lecture, I surfed the Whole Foods Recipe app and came across a salad dressing that inspired some immediate experimentation.

A star was born.



This dressing is absolutely delicious. My mom wanted to stick a straw in it and slurp it up straight. It's sweet and creamy and perfect for those sunny afternoon lunch salads. I'm definitely in love.

Creamy Strawberry Balsamic Dressing
Adapted from Whole Foods Market Recipes
Makes 1 cup

1/3 cup cashews (soaked overnight if using a regular blender, raw if using a Vitamix)
1/2 cup strawberries (6-7 whole strawberries)
1/3 cup unsweetened almond milk (or any non-dairy milk)
1 T balsamic vinegar

Throw all the ingredients into a blender (Vitamix, if possible) and blend on high until smooth.
