Highlights From the Weekend

Guess who visited me this weekend?



VINU!

Vinu is one of my bestest friends. I'm not entirely sure the term "friend" does justice to our relationship. Anyway, we have been friends since 7th grade! Crazy, right?

We had a wonderful time this weekend. We tracked down some old friends and took a trip down memory lane. We spent most of our weekend in Austin where the two of us met and grew up. I thought I would share some quick highlights!

The Oasis

On Thursday night, we headed out to watch the sunset over Lake Travis.

We also met up with our high school friend, Meera!



We followed our happy hour with dinner at Chuy's-- an Austin staple. Vinu, who lives in Virginia, was craving some good Tex-Mex. Chuy's definitely hit the spot.

Casa de Luz

Casa de Luz has become my new favorite go-to in Austin. I went there over spring break and cannot stop thinking about it. It's probably the most hippie-happy place I know. So, it was definitely on the agenda for Friday.



We started with a sweet potato and ginger soup along with a mixed salad with a hemp seed dressing.



The entree consisted of a green lentil dish, brown rice with a mushroom gravy, sauteed vegetables, blanched greens with an almond cilantro sauce and a little portion of pickled radish.



Absolutely amazing.



Vinu was a little apprehensive when I told her we were going to an all vegan, organic kitchen for lunch. She's not really into that sorta thing. And then, when we got there, she saw the menu for the day and silently said a prayer. But, she cautiously tried everything and before you knew it, her plate was clean!



In fact, all three of us (we were joined by her friend, Thushara) licked our plates clean!

Post-lunch, we hit up the Domain to meet up with another high school friend, Vishu. We walked around and talked about healthcare. Vishu is in med school, Vinu is in public health and I'm in healthcare administration...the topic couldn't be avoided!

Saturday, we spent the day at a Indian dance drama and caught up with Yam (who flew in on Saturday from Chicago!). And, on Sunday all three of us (Vinu, Yam and myself) left for Houston to catch flights and uh, drink green smoothies.



Aww yeah! She's pumped for that green smoothie action! This would be her first but hopefully not her last.

It was such a great weekend! We had so much fun reminiscing and catching up with old friends. I already miss having Vinu around. But, that's why we talk on the phone everyday (much to our parents' dismay).
