What I Ate Wednesday (WIAW)

This is my first "What I Ate Wednesday" post! This concept is pretty popular in the blogging world, but I have never participated. Over the last few weeks, I have realized that I eat the same things over and over again. This is a result of cooking in larger batches to last me 2-3 meals and making nearly identical salads from week to week. So, I figured I would save you from the boredom of reading/seeing my daily eats daily and just show you once a week. Sound good?

Technically, this is what I ate Tuesday. But, let's get started.

It all starts with a green smoothie.



This one had about 8 clementines, 3 strawberries, 3 large handfuls of spinach, a handful of kale, and small amounts of collard greens and Swiss chard. I usually use a banana, but I was out so I substituted with a butt load of oranges. Also, pictured above is part one of the smoothie. Part two was hanging out in a large mason jar. They were both consumed for breakfast.

For lunch, I packed up a quinoa & veggie stirfry I made the night before.



I water-sauteed carrots, celery, bell peppers and large handfuls of various greens with a salt-free spice mix. I tossed in cooked quinoa and called it a day.

To round out lunch, I also had an orange and a mug of peppermint tea.



That orange was absolutely amazing. It was difficult to peel and a little messy, but so sweet and yummy.

I had an evening class last night and didn't get home until pretty late. I was crazy hungry and just wanted to throw together some comfort food. What says comfort better than avocado on toast?



Two slices of sprouted wheat toast, avocado, lemon juice, black pepper, paprika and a small pinch of red pepper flakes. Delicious.

I decided to stay up late last night and soak up the last bits of freedom before I become a real person in May. I'm a month away from graduating and starting a job. Time to live it up, right? (And yes, staying up late to watch a movie is "living it up" in my book.)
