Weekend Update

I was in Austin this weekend! I was so glad to be able to spend a weekend there. I was a little afraid that I wouldn't have enough Austin relaxation/family time before joining the real world. This weekend helped...a lot!

The weekend highlights?

SUSHI!

I made it too! Brown rice with kale, grilled onions, zucchini, cauliflower, carrots and avocado. Not a very conventional roll, but it was delicious!

I also had a massive salad in a massive bowl. I made this when we had a few guests over for an impromptu dinner. They were expecting to get a small serving as a side salad and uh, I ate it all. Oops. Hopefully, they've learned their lesson.

Spinach, chard, kale, zucchini, jicama, cauliflower, carrots, celery and dried cherries. It was exactly the same as the one from Friday except that the grapes were replaced by cherries. It was topped with the same dressing too.

The weekend also meant making smoothies for three. My parents are definitely smoothie fanatics. They make green smoothies at least once a day. It was fun to do it together!

The smoothie above had flax seeds, clementines, frozen cherries, banana, spinach and kale. It may not look like it, but the greens were really packed in there!

I ran a few errands with my parents which included grocery shopping. Check out this massive grapefruit. It was as big as my face! I was impressed and a little horrified.

On a non-food note, I finally got a replacement toothbrush head. It's a long story that involves forgetful parents, couponing and me getting comically upset. But, after three weeks, I can finally (FINALLY) brush my teeth with my electric toothbrush.

Was that TMI? Oh well. It was really important to me. It was, in fact, the first thing I inquired about after saying hello to my parents on Friday night. I'm really weird about my toothbrush.
