Grape & Coconut Quinoa Cereal

It should come as no surprise that my favorite pseudograin is quinoa. I make it almost every week. It only takes 20 mins and one batch lasts me about 4 meals. I also love how versatile it is. I've eaten it in savory dishes and sweet dishes alike. I've even baked with it! One of my favorite ways to devour quinoa is as a breakfast cereal. I use cooked quinoa, add chopped fruits and maybe a few nuts, and top it off with almond milk. I came up with a killer combination this weekend that I decided to share.
I used about a cup of leftover cooked quinoa, added a handful of sliced grapes, and some fresh and shredded coconut. I also added a lonely date roll that was hanging out in my pantry. I poured almond milk over the whole thing and became giddy with excitement. It was SO good-- sweet, filling, and a great combination of flavors. Of course, the addition of fresh coconut helped a lot.
I highly urge you to hunt down an Indian grocery store. My parents and I enjoyed fresh coconut water for $2.50 a piece this weekend. And, if you've only ever had Zico or other bottled brands of coconut water, you are totally missing out. The fresh stuff is way sweeter! And, you get to crack it open and eat the flesh after you are done. Whole Foods does sell whole coconuts but they are in the $7-9 price range and they aren't organic. So, don't bother. Just go to an Asian market of some sort. I promise, it's worth your while.
