Sweet Potato Chia Pudding

Hello, stranger.

Oh, wait. That's your line. Oops.

I've been enjoying my spontaneous break from blogging. I can't say I've done anything specific on my break, but it's been enjoyable. However, I'm looking forward to jumping back in with regular posts. I've been thinking about blogging and writing all week. I spent most of that time coming up with that "hey, stranger" bit, but after that I decided that there is no better way to welcome myself back to the blogging world than to post a recipe!

I bought a crate of sweet potatoes at Costco last week. I have slowly been getting through them. But, after eating my twelfth salad with sweet potatoes on top, I decided that there had to be a better way to eat these. Behold, sweet potato chia pudding.

I started out with two medium sweet potatoes.



Peeled, poked, wrapped and baked.



Then, I put them into the Vitamix with almond milk and cinnamon. You can add stevia or another sweetener here if you want it, but I found it to be plenty sweet.



The mixture became friends with some chia seeds. And, voila!



Ok, ok, that wasn't a recipe. But, it has been the most exciting thing I have made in the last two weeks. (Yes, my life has been pretty lame without the normal blogging action.) I'll try to be more creative this month. Let's see how that goes, shall we?

  1. I made this this weekend--I'm sure you can find a substitute for the eggs, but I too was craving Sweet Potatoes, just not a crates worth...
