The secret to great salsa

Fresh salsa is good. A fresh mix of tomatoes, garlic, onions, jalapenos, lime juice/zest and cilantro. Roast this mixture and it is transformed. It becomes great salsa.

Roasting it only takes a few minutes. Just heat a small amount of oil in a pan and dump in your salsa and let it rip. Roasting brings together all the flavors and makes the salsa irresistable.



I served my salsa with a whole wheat quesadilla instead of the traditional chips. Also, just a note, the volume of salsa reduces considerably in size when you roast it (you cook out the water.) Keep this in mind if you plan of making this for a party. Enjoy!
