Creamy Tomato Sauce Fake-Out

There is nothing like a bowl of warm pasta, a glass of red wine and an episode of Gilmore Girls at the end of a long day. Especially when the pasta sauce is homemade. This my take on a creamy tomato sauce without the cream.




This recipe is so easy. And it yields quite a bit of sauce, enough for your next few meals. Since it all ends up in the blender, you don't have to bother with chopping everything perfectly which saves a lot of time. You start out sauteing onions and garlic in a little olive oil. Once the onions and garlic are done, you can add the roughly chopped tomatoes. This is a good time to season the sauce. I used a variety of Italian herbs and a few pinches of red pepper flakes.

My secret weapon to make this a creamy, decadent pasta sauce? A handful of peeled almonds! I soak my almonds overnight to remove the harmful enzyme inhibitors. Once I'm ready to peel, I soak them in boiling water for a few minutes to make the skin loose. The almonds will literally pop out of the skin.

All of these ingredients are dropped into the blender and blended until smooth. And that's it. Now, you have a batch of some tomato sauce to use with pasta, ravioli, pizza, lasagna and even grilled veggies.

Variations: Roast your tomatoes in the oven. Roasting them brings out a whole different flavor. Use a few roasted bell peppers in the sauce (you can find them jarred making this addition super easy).
